According the expert McGee consulted, soup or stock left to cool overnight, then reboiled for 10 minutes and properly refrigerated in the morning is still safe to eat because it isn’t cool long enough for the bacteria to germinate and reproduce up to dangerous levels. But a stock left out for two days “‘almost certainly has high levels of infectious Clostridium perfringens …

However, hanging out in room temperature soup for 8-10 hours might provide the ideal environment for a population explosion. In which case: pitch it. What I have done, and lived to tell the tale, is bring the forgotten soup back to a boil, let it cool, pack it up and move on with life, eating the leftovers as I would have had I not fallen ...

winnybella Tue 05-Jul-11 17:22:50. Chicken only half covered by soup (basically boiled the whole chicken with veg ). Forgot about it and left it for approx. 6 hours on the side before putting it back in the fridge. It was quite warm yesterday, temp in the kitchen definitely over 20 degrees. I think that you have a substantial margin on this before anything bad actually starts to happen, especially for stock in a covered pot, so if overnight means around 8 hours, you are probably fine. 10ish is probably okay.

Sun, Jun 27 2010, 11:13 am. Food handling tip: Not more than 2 hours between 40 degrees F and 140 degrees F. Otherwise, bacteria can grow. The food doesn't even have to look/taste/smell spoiled for potentially illness-causing bacteria to grow. I wouldn't eat it, especially something that had meat in it.

If in doubt, throw it out.... The suggested amount of time at an unsafe food storage temperature (40-degrees F. to 140-degrees F.) is two hours. You should use this safer method for cooling the soup and not leave it out at room temperature. To cool it quickly, fill your sink with cold water and place the pan of soup in the cold water.
