I had planned to do a roast chicken (as that's easy to buy locally), but then have been called in to an urgent meeting from 3pm-6pm (I'll be out of the house from 2:30pm-6:30pm). As dinner needs to be ready by 7:30pm, a roast is off the cards UNLESS I can prep & get it into the oven before I leave at 2:30pm, and leave it to roast for around 4 hours.

Leave the veggies in the pan bottom and put the bird on top. Roast in tightly covered Dutch oven at 225-250F (110-120C), 4-6 hours depending on bird weight (I usually find a 6.5 lb / 3 kilo bird goes about 5 hours). My lid covers well but is very light so I put a couple of 1 kilo steel barbell weights on the lid to be sure it seats well.

The four-pound chicken I used in this Slow Roast Chicken recipe took a full three hours at 300 degrees. Slow roasting a chicken will not give you crispy skin, but the meat gets so tender it’s practically falling off the bone, and it stays juicy and moist. Slow Roast Chicken is perfect for a weekend when you’re home doing things around the house.

And then, here’s the genius part—the chicken roasts not at a blistering 425°, but at a casual 300°. Nice and low and slow, for a good three hours.

Roast the chicken leg quarters. Place the sheet with chicken in the middle rack of a preheated oven and bake for 1 hour and 30-40 minutes. Then raise the temperature of the oven to 425F and remove the foil. Depending on how much juice the chicken produces, you may want to add a splash of water.
