In fact, raw meat should never sit out in temperatures above 40 F for extended periods of time – and never longer than two hours for any reason. The Two-Hour Rule The type of meat doesn't matter when it comes to the two-hour rule. If it’s raw, it’s no longer safe to eat once it sits out at room temperature for two hours.

Four hours in the danger zone is actually the Federal guideline for meat. Like, in a USDA plant, I can leave meat out for four hours at 70 degrees, then put it back in the cooler, and use it later. Shelf life will be hurt, but that's a perfectly fine amount of time/temp abuse. No problem. 8 Share ReportSave Continue this thread level 2 Op· 6y

Please Help! Raw meat left on counter overnight. Last night (around 10 pm) I vacuum packed some raw pork tenderloins and some sausages that were meant for the freezer. Must throw away food after 4 hrs (in food service). I would definitely not trust anything beyond 4 hrs. If you are not going to throw it away or are unsure heat above the pork temp of 145 to 165 degrees Fahrenheit. Don't want to get sick. 1 level 1 Comment deleted by user 5 years ago More than 2 children level 1 doomgoblin 5 years ago

When food temperature enters the "danger zone" of 40-140F/4-60C, there's a lag time of 2 hours before bacteria go into exponential replication. Any longer, and the bacteria counts start to increase exponentially, doubling every 30 minutes to an hour.
