If it was too late to make the last collection on Saturday, it'll be Tuesday, as it'll only get collected and despatched on Monday. If it was collected and entered the Royal Mail network in time on Saturday, it will make the Monday delivery.

Surely it's next working day - so Monday. Guaranteed delivery by 1pm on the following Monday costs £2.70 extra if posting on a Saturday. If the OP hasn't asked and paid for that, then the next working day guaranteed will be Tuesday. It's quite likely to turn up some time on Monday though.
