Hey Mayslacks, most bars are upping the quality of the food, not the size of the menu these days. Roast beef Primer- Get a chuck, trim the fat off of it, sear it, then put in in a low oven for several hours with some red wine, garlic, onions, carrot and celery. Chill and slice. Reheat with the jus from the pan you cooked it in.
