I received a fully cooked 13 pound pit ham from work at 12 noon. It was refrigerated when I got it. I made it home 4 hours later after running errands and it was 38 degrees outside and the ham was in the car the whole time. I forgot to put the ham in the refrigerator and left it still in the bag and box on the floor in the kitchen.

Ham is cured meat and historically it's been left out (all be it in cellars) for weeks at a time. I would guess 24 hours would be ok. best thing to do is have a taste test. heat up and eat a small piece. if it tastes like ham, it's probably going to be ok to reheat the ham for a couple of hours and enjoy.

I'm the one who left the cooked ham out for 24 hours. It's been about an hour now and not sick yet. I ate a small slice but then got worried and didn't eat any more. It was in a sealed plastic container. Will that make me sick?

I baked a ham today for a brunch tomorrow and am running out of room in the fridge. I wonder if it would be safe to leave the ham out overnight, smoked meat being much less apt to spoil than other meats. My alternatives include: freezing an unbaked quiche (that doesn't have the custard yet, just the veggies) and trying to thaw and bake in the ...

Time: Around two hours If you get distracted and leave cooked food out after dinner or for a party buffet at home, have a policy to take care to refrigerate the leftover foods after roughly two hours, when the danger of contracting sickness from perishable food begins to increase fast. The warmer the room, however, the less time meat should be left out. Bacteria doesn’t need long to spread over a surface and grows best at temperatures between 40 degrees Fahrenheit and 140 degrees Fahrenheit. And no, cooking or reheating meat that has been left out for over two hours does not kill the bacteria.
