I had a successful Coles delivery to Hamilton Island last September. I know exactly what you mean, it did the same thing to me. I had to call them up and they fixed it. I don't know why this hasn't been fixed by now. Just ring them, they were quick when I had to do it.

So I just called Coles customer service and they have confirmed that their contract to Hamilton Island expires on 8 October 2016 and all delivery times up until then are fully booked. They will no longer be deliverying to Hamilton Island. I hate to give false information on this site so couldn't help myself but to call them and see what the go was.
