Oct 04, 2007 · I hickory smoked the Pork Butt for 4 hours at about 275 degrees on my Weber Kettle Grill. Then I tightly double wrapped the butt in aluminum foil, placed it in a roasting pan and cooked it at 225 degrees for 4 more hours to an internal temp of 195 degrees. Let it rest for an hour and pulled it apart.
