When I was banquet sous (banquet chef) I worked 70 a lot. Restaurant sous chef was much easier. The hours went by quicker. All of a sudden it's time to cleanup already. Maybe 50ish hours as restaurant sous, not counting the hours at the bar after the restaurant closed of course.
